So I thought we needed a new post so I thought I would follow in Val's footsteps and share a recipe with you. On Monday night I made dinner for Kara and made some chicken wrapped bacon that we thought were really good and fairly easy to make.
Ingredients:
1 1/4 pounds boneless, skinless, chicken breasts
1 package sliced bacon
2/3 cup packed brown sugar
2 tablespoons chili powder
Directions:
Preheat oven to 350 degrees. Stir together brown sugar and chili powder and set aside. Cut chicken breasts into 1-in cubes. Cut bacon strips into thirds. Wrap each chicken cube with bacon and roll in brown sugar mixture. Secure chicken wrap with a toothpick. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wraps on rack in broiler pan. Bake at 350 for 30-35 min or until bacon is crisp.
