New Rolls

So I love to try new recipes and try new things, and tonight I made these rolls that I found a recipe for in a cookbook we got for our wedding...and val told me I needed to post the recipe.  They were really easy and really tasty, yum yum:)

Dinner Rolls

2 tsp yeast
1/4 cup warm water
1 cup milk
1/2 cup butter or shortening
1 tsp salt
1/4 cup sugar
2 eggs, beaten
3 cups flour

Dissolve yeast in warm water and allow to rise until frothy (about 5 minutes).  Heat milk until it almost boils.  Remove from heat and combine with all other ingredients, adding yeast and flour last.  Place dough in a greased medium mixing bowl.  Allow to rise one hour.  Drop by tablespoons into greased muffin tins, filling each about 3/4 full.  Let rise about one hour.  Bake and 400 degrees for about 8 minutes or until lightly browned.  Makes about 16 rolls.

*They weren't completely done at 8 minutes and I left them in there for a little too long...I recommend 10 minutes and they should be good.  I also had to add more than 3 cups of flour!
